Bacon with Tortellini and Asparagus

Ingredients

  1. 2 bagsfamily size 5 ~ Cheese tricolor tortellini (20 ounce)
  2. Salt for boiling water
  3. 1 packbacon (12 ounce)
  4. 1onion, sliced
  5. 2peppers (green and red) sliced
  6. 8 clovesgarlic, minced
  7. 1 bunchfresh asparagus, cut into 2 inch pieces (make sure to cut off the woody ends and discard)
  8. 1/8 teaspoonblack pepper
  9. 1 tablespoonItalian seasoning
  10. 1 tablespoonoregano leaves
  11. 1 teaspoonSazon with achiote
  12. 1/4 teaspoonbasil leaves
  13. 2 cans (28 ounce)crushed tomatoes
  14. Parmesan cheese

Cooking Instructions

    Cut bacon in half and cook on low heat in a large pot until bacon is cooked, do not drain fat …….

    Add to bacon your sliced onion, peppers and minced garlic, sauté for several minutes…..

    Add in your cut up asparagus and sauté for about 10 minutes……

    Next add in your black pepper, Italian seasoning, oregano leaves, Sazon with achiote and basil leaves, sauté for a few minutes……

    Next add in your two cans of crushed tomatoes, stir gently and bring to a boil ……

    Reduce heat and cover pot slightly, then cook on low heat for 30 minutes, stirring occasionally……

    About 20 minutes before your sauce is done boil some water for your tortellini,don’t forget to add salt to the water !

    Boil tortellini according to package directions, about 3 minutes, drain, then add cooked tortellini to your asparagus sauce, stir gently……

  9. 9

    Remove pot from heat, top each serving with Parmesan cheese and enjoy !
