An amazing twist to the plain old Potatoes for Breakfast and Lunchbox. I have used roasted Dry Coconut or Khopra in this well-blended for a creamy and luscious dish.
It's the best alternative for meals. Be it Breakfast or Lunch, it's absolutely good. It's also the best option for Lunchbox. And not only that, but I also prefer it for Suhoor in Ramadan. Not only, Ramadan, but I also make it whenever I fast other than the Month of Ramadan.

It's a delicious side dish and goes very well with Rotis, Chapatis, Phulkas, and Parathas. Though it's great even with simple boiled Rice it tastes yummy with any Indian Bread.
I always dry roast the Coconut and powder it for storage in an airtight container in the refrigerator. And whenever it's required, I just blend it using some water to a smooth paste. It's a way lot more convenient that way.

Ingredients

25-30 minutes
5-6 servings
  • 500 gmsPotatoes diced
  • 2chopped Onions
  • 2chopped Tomatoes
  • 1 tspGinger garlic paste
  • 1 tspSalt or to taste
  • 1 tspRed Chilli powder
  • 1/2 tspTurmeric powder
  • 1 tspCoriander powder
  • 1/4 cupDry Coconut powder
  • 1 small bunch chopped Coriander Leaves
  • 2chopped Green Chillies
  • 2-3 tbspOil
  • 1/2 tspGaram Masala

Steps

25-30 minutes
  1. 1

    In a pan, heat Oil and add the Ginger garlic paste and Green chilies. Saute for a minute and add the rest of the spices. Now add the sliced Onions. Saute until translucent. Now add finely chopped Tomatoes. Cover and cook for nearly 4-5 minutes until they are soft and mushy.

    Now to be followed by the diced Potatoes. And then by the blended Coconut. Cover and simmer on low heat for 15-18 minutes. Open the lid and adjust the salt accordingly.

    Saute until the Oil starts separating and a thick masala is formed due to Onions and the Dry Coconut. Garnish with lots of chopped Coriander Leaves and Garam masala. Serve hot as a side dish to your favourite meal.
