Maharashtrian style masala bhaat

Heat a kadhai with oil.
Saute aloo till it gets some colour. Next fry the cashewnuts and keep aside. Next splutter mustard seeds and cumin seeds. Add bay leaves and hing.
Then add chopped onion. Saute for some time. Next add chilli and ginger thecha. Saute all together.
After onion turns brownish, add the vegetables, aloo and cashewnuts.
Keep the heat slow.
Add salt, turmeric powder, red chilli powder, coriander powder, garam masala and goda masala. Add little water and mix all the dry masalas - 2
Next add the strained soaked rice. Put ghee.
Mix and saute all together for some time. - 3
As the rice is nicely sauteed with vegetables, add it into hot water.
Add chopped coriander leaves in water. - 4
Put the pressure lid and cook in medium heat for 2 whistles.
Then switch the flame off and let the cooker release pressure. - 5
Open the lid and fluff up the rice with a fork.
It's ready!!
Serve hot... - 6
We had it with dahi bhindi and salad..
