Dosa is a staple in most Indian households but there are varieties and there are fusion. I made a healthy one with Pumpkin. Let’s dig!
Steps

Wash the pumpkin and peel, cut into small pieces and in a wok heat 1 Tbsp oil, add the pumpkin pieces and pinch of salt, cook until softened. Cool and add to a blender and make a purée, add to a mixing bowl

Take the cooked rice and add to blender and make a paste, add to the pumpkin purée mixing bowl

Add to the mixing bowl Rava, Dahi, ginger chill paste, salt and water and mix well, then whisk well, make a thin batter consistency and cover for 15 mins

Add ENO and mix. In a pan add a ladle of the batter and spread evenly, drizzle oil on sides and fry for 2-3 mins on one side, flip and fold to set aside. Complete the batches

Plate with Green chutney and enjoy
