I love Greek food, and also slow cooked meat, so thought I would give my own Kleftico recipe a try. I cooked in parchment as there aren’t many places to cook underground in Bristol…. 😂

I love Greek food, and also slow cooked meat, so thought I would give my own Kleftico recipe a try. I cooked in parchment as there aren’t many places to cook underground in Bristol…. 😂

Mix the olive oil, lemon zest, lemon juice, garlic and mustard together

Poke holes in the lamb leg with a sharp knife and smother the lamb in the marinade. Leave for 3 hours, 24hrs if you can in the fridge

Bring the lamb leg out of the fridge 30 mins before you want to cook. Peel and chop up the potatoes. Lay in a roasting tin lined with parchment paper. Preheat oven to 150 fan, 170 non-fan

Rest the lamb leg on top of the potatoes and cover with parchment paper. Making sure it’s sealed.

Put in the oven for 2 hours. After two hours turn the leg over and re-seal.

Put the lamb back in the oven for another 1.5 hours. After that remove the top parchment and let the lamb roast for 30 mins. Add the feta to the tray.

After 30 mins, remove the lamb to rest. Turn the oven up to 200 and crisp the potatoes while the lamb is resting for 20 mins.

Serve. I served with some pitta, tzatziki and rocket. Went down a treat in the Cookpad kitchen.
