Wash the spinach thoroughly and place it in a pressure cooker with a little water and salt. Cook until 2-3 whistles. Drain the spinach, reserving the water. Cool the spinach and blend it in a mixer jar with 2 green chilies and 1/2 inch ginger to make a fine paste.

Heat ghee in a pan, add cumin seeds, cardamom, and cloves to temper.

Add the prepared spinach paste and mix well. Cook on high heat for 2-3 minutes. Add rock salt, roasted cumin, and black pepper powder and mix.

Cook the spinach until the water evaporates. Add a pinch of sugar.

Soak the paneer in warm water for 10 to 15 minutes to soften it and enhance the flavor. Then cut into cubes.

Add paneer and the reserved spinach water to the spinach mixture and bring to a boil.

Add a little milk and cook for 2 minutes, then remove from heat.

Serve hot with buckwheat puris or roti.
