Egg sauce with fried plantain
Steps

Roughly blend or chop your peppers and onion. Put a small pot or pan on fire.

Add a little veg oil.Add in your sliced onions. Add your blended peppers.

Season with salt to taste and seasoning cube. Stir fry for about 5 minutes

Open pot, and stir thoroughly till egg forms strands. Add curry leaves or spring onions.

Break your eggs and add to the pepper sauce

Deep fry in hot vegetable oil till golden brown. Serve alongside egg sauce.

Lower flame, cover the pot and allow to cook for about 3 minutes.

Peel and slice plantain. Season lightly with salt.
