Steps

Wash the vegetables and peel them. Cut the potatoes into thin edges and cut the Ridge gourd lengthwise and quarter them, set aside

Soak Dal overnight, don’t discard the water, strain and add the Dal to a blender, add a little of the soaked water, salt, and 1 tsp sugar, and blend smooth. Set aside and whisk well, batter for dumplings are ready

In a heavy-bottomed wok heat mustard oil, take 1 Tbsp of the batter and add to the oil to fry the dumplings on medium heat. Flip sides after 1 min, set aside

In the same oil add potatoes and add 1 tsp turmeric powder, salt and fry on medium heat a little, set aside

Set aside a little of the oil. Add to the rest cumin seeds, let it splutter, add Hing infused water (1 Tbsp) into it, stir once, add a watery paste of cumin powder, red chili powder, turmeric powder, and add to the oil-Hing mix, stir once and add Ridge gourd, add green chilies, salt and stir. Water will be released.

Add 3-4 cups of water at this stage(dumplings tend to soak water and the consistency should be initially watery). Add fried potatoes, stir well and bring it to boil.

Add the dumplings and sugar, mix well, reduce the flame to cook the potatoes for 2 mins, stir and set aside.

Serve hot with steamed rice and enjoy 😊
