Bibim-guksu / Korean Cold Spicy Noodles

This week I was watching a Korean Reality Show called Young Actors Retreat. In the show, they were setting up foodtrucks for their fans and particularly one truck was serving Bibimguksu. Bo-Gum was trying really hard to make his Bimbimguksu taste good that I thought, man.. I should have that as well! Lucks on me, I have all the ingredients at home!
Original recipe is from Maangchi. I have adapted it a little for the comfort of my tummy since I cannot take food that is too spicy.

Bibim-guksu / Korean Cold Spicy Noodles

Mix chopped kimchi, kimchi brine, sugar, Gochujang sauce and sesame oil in a bowl.
If it’s too sour or spicy, add some sugar and salt to taste. If the kimchi brine is not enough, add some cold water. If you prefer it sour, you may add vinegar.
Set aside or in the fridge to cool.

In a pot of boiling water, cook the noodles. Add salt into the water.
I used Somen noodles, which is also popular for cold noodles in Japan.
It takes only a few minutes to cook. Do not overcook.

When the noodles is soft, drain it using a mesh strainer and dip it into the pot of cold water for a few seconds, then drain again.

Put the noodles into a bowl and add in the sauce. Mix well. Add sesame seeds to your liking.

Serve it in a bowl. Top with cucumber and halved egg. Enjoy!
