An eons-old Middle Eastern dip that is loved by many for its creamy, velvety smooth texture and taste, is easy to be whipped up at home. The trick lies behind the right blending. A constant blitz with Olive oil added little by little without adding all at a time is actually the correct way of doing it. It takes about a good 15 minutes of blitz with an interval of a few seconds after every 4 minutes. Try this beautiful dip for your families at home and experience for yourselves the lovely taste of it.

Ingredients

10-12 minutes
7-8 servings
  1. 400 gmDry Chickpeas or Canned
  2. 1 tspSalt or to taste
  3. 1/2 cupOlive Oil
  4. 2-3Garlic Cloves
  5. 2 tbsproasted Sesame Seeds
  6. 2 tbspLemon juice
  7. 2 tspSumac for the sprinkle

Steps

10-12 minutes
  1. 1

    If using fresh ones, soak the Chickpeas overnight or for 4 hours at the least. Boil them with a little salt and drain.

  2. 2

    To a blender, add these boiled Chickpeas and the other ingredients as well except the Olive oil. Blend until smooth and velvety.

  3. 3

    Scrape the sides as you blend and keep adding Olive oil little at a time for a smooth satin-like Hummus.

    Drizzle some extra Olive oil and sliced Kalamata Olives before serving. Or just plain Sumac. It's absolutely your choice. Enjoy!
