Oat pancake

I was inspired by some professional nutrients who made this recipe as part of program to control the weight when my wife was experimenting with diet. This is quite healthy (especially if you not use oil to fry it) and consumable even by people who hate the oat since birth. Later I heard about this recipe as “fried oat” or “oat pizza” but I’d like to keep the original name mostly because this is how it’s remembered in my family

I amended healthy recipe by adding more flavourful proteins and vegs but it still seems to be healthy enough (what may be wrong with oat, eggs, fish or meat and tomatoes?! ;))

Original recipe was saying about 50g oat and two eggs but obviously oat is different and eggs size as well. So I ended up with 40g oat and small egg as the best proportion which is working for me. You can experiment yourself but idea is as more crispy you would like to have it you’re adding more oat; as more softer you’d like to have it you’re adding more moisture (eggs or if you would like to be more precise you can add a bit of milk or even water)

Steps

    Mix oat and egg and pinch of salt, and put on non-stick pan

    Turn it after 5 minutes or at the moment when it has some shape to be turnable without losing the structure

    Put back on the plate

    [Optional] add cheese
    Preferably use grated cheese but I was at Ukraine when cooked this and choice of grated cheese at supermarket are bad and I had a lack of time to make it myself so I just thickly sliced the cheese and put on pancake

    Put in microwave for minute or so until cheese is melted
    It’s ready to eat - I prefer to have some salted or smoked meat or fish (like smoked salmon) to accompany it, but some people are eating as is
    Also as it’s usually my breakfast I couldn’t prevent myself from adding Piccolo Tomatoes on top of it to add a bit of sour taste
