For a long while looking for a pão de queijo recipe without polvilho. After some research in the internet and some trial and error we manage to get this amazing tasty version.

Mix water, milk, oil and salt in a sauce pan. Boil it in medium to high heat.

Add half of the tapioca flour to a big bowl and pour in the the mix from the pan. Using a hand mixer, mix everything until you get a white sticky fondant like dough.

With the mixer on, add the eggs one after the other. Only adding the next when the first one is well mixed to the dough. It might not seem it will mix but it will.

Once the eggs are mixed in. Start to add the cheese, a little at a time mixing very well.

Once the cheese is all mixed. Start adding the remaining flour a little at a time and keep mixing. The dough must get stickier and stickier. It should still be soft and sticky in the end.

To make the balls wet your hand with cold water, scoop some dough with a spoon and shape it with the hands. Put the balls in a tray lined with parchment paper. The balls should be a bit smaller than a golf ball.

To bake them pre-heat an oven to 200C and bake from 10~20 min or until they are golden.

Alternatively use the air fryer setting it to 180C for around 8 min flipping mid time
