In a pressure cooker, smoke mustard oil. Once it comes to a lower temperature, add chopped onions. Fry onions.

Ground green cardamom, clove and cinnamon stick to a fine powder.

Add washed mutton pieces to onion. Add salt and roast. Add grounded sources and black cardamom and green chillies.

Add ginger garlic paste and continue to roast.

When the mutton starts turning reddish in colour, add puréed tomatoes.

Give it a nice mix. Add red chilli powder and turmeric powder. Continue to roast. You can sprinkle a bit of water if you want.

When the oil starts to separate, add water and pressure cook till the mutton is cooked perfectly, that is, it soft and tender.

You can garnish with chopped coriander leaves. Serve hot with steamed rice.
