A simple dish that I knocked up by just looking in the fridge. A perfect lunchtime dish.
Spring onion & Cheese baked omelette with buttered vegetables
A simple dish that I knocked up by just looking in the fridge. A perfect lunchtime dish.
Steps

Add the eggs, milk, cheese and spring onions in a bowl and give it a gentle mix.
- 2
Line a small cake tin with parchment paper and pour in the contents. Bake in a preheated oven at 180c until nice and golden.
- 3
Blanch some vegetables (I’ve used tenderstem broccoli and asparagus) for a few minutes then add them to a frying pan which has been slowly heating with a good knob of butter.
Serve warm with the omelette.
