A classic Breakfast recipe from the city of Hyderabad. Paaya refers to the Lamb trotters and Sira or Lamb Head. It is a famous Breakfast dish in the city. Though it is made in most North Indian regions too but the one from Hyderabad stands out a little in terms of taste, flavour and the making process too. This is undoubtedly a super food Nashta or Breakfast loved by most of the Hyderabadis. It is so very synonymous with the city as much as the Hyderabadi Kachi Akhni Dum Biryani.

It's too flavourful and aromatic because it is slow cooked and the special Potli ka Masala that goes into it's making. This masala can be homemade too and is easily available in any Indian grocery store. You can even check it's recipe on my profile here on this platform. This double dhamaka slow cooked Curry is a perfect choice for a power packed Breakfast especially in Winters. It's a powerhouse of essential nutrients full of Vitamins and Minerals.

Ingredients

4-5 hours
8-10 servings
  • 8Lamb Trotters (cut into 2)
  • 3 tbspGinger Garlic Chilli paste
    Homemade Ginger Garlic Green Chilli Paste
  • 2medium sized chopped Onions
  • Potli ka Masala
    Potli ka Masala
  • 1 tspSalt (Adjust more after done)
  • 1small bunch chopped Coriander Leaves
  • 1 bunchchopped Mint Leaves
  • 4 litreswater
  • FOR Lamb Head or Sira
  • 2chopped Onions
  • 1 tbspOil
  • 1 tbspGinger Garlic Chilli paste
  • 1 tbspRed Chilli powder
  • 1/2 tspGaram Masala
  • 1 bunchchopped Coriander Leaves
  • 1 tspSalt
  • 2 cupswater
  • FOR THE TEMPERING-
  • 1 tbspOil
  • 1 tbspRed Chilli powder
  • 2 tbspCoriander powder
  • 1/4 cupSorghum or Jowar Flour
  • 1/4 cupRoasted Bengal Gram or Putana Daal
  • 2-3large deep fried Onions or Birista

Steps

    In a large cooking pot, add the lamb trotters. Now add the ginger garlic paste. Add the green chillies and chopped onions too.

    Also tie up the potli ka masala in a muslin cloth. Drop it in the pot along with 4-5 litres of water. Let it come to rolling boil first. Then lower the flame and simmer for nearly 4-5 hours.

    Cover it up and simmer. Meanwhile pressure cook the lamb head parts or sira with some salt and ginger garlic paste and a few other spices as mentioned. Keep it aside for the pressure to settle down. Alternatively it can be slow cooked in another pot as well. This is done so because it takes less time in cooking than the lamb trotters. The choice is yours. I usually pressure cook it because it hardly takes about 7-8 whistles.

    After about 4 hours of slow cooking, remove the muslin cloth and discard it. Heat oil with red chilli powder, roasted chana daal or putana daal powder, sorghum flour and coriander powder. Add this to the pot after half a minute. Let it cool down. Mix it in little water to form a slurry and then add it to the pot. Add fried and crushed onions too.

    Now add the pressure cooked head parts to this stew so that everything is well incorporated. Keep stirring it as you do. After adding all, give it a good mix very gently. Now let it cook until it thickens a bit for about 20 minutes or so on a high heat. Stir it a bit every 3-4 minutes. Garnish with lots of chopped coriander, lemon wedges, fried onions or birista, ginger julienne etc.

    Serve it piping hot with naans and salad alongside.
