Whisk the egg whites (using a stand mixer is best) until you get a smooth, glossy meringue that forms stiff peaks. You can add food coloring at this stage if you like.

Tip: Start whisking slowly, then after about 5 minutes, increase the speed.

Bake for 1 hour 15 minutes to 1 hour 30 minutes at 220°F (105°C). Do not increase the oven temperature or the meringues will brown.
