Pickled Cucumber and grape salad

A refreshing addition to accompany a heavy meat fest! Made this for a Xmas potluck! Very easy and can be made ahead.
I use mirin to balance the flavours, you can also use coconut sugar instead. The chili flakes add a spicy extra kick to this salad.
I also use a ziplock bag to reduce washing fi dishes.
Cooking Instructions

Chop cucumbers in chunks and place in a large ziplock bag. Add salt and mix well. Press something heavy on it and leave it overnight.

Drain water out from the cucumbers. Add in grapes and all seasoning and mix well!

Marinated Cucumber Red Onion Salad
I think I am addicted to this as well as other salads. So easy to make, healthy as well. In this photo you will see bits of finely shredded cheese. Ooops, I was making broccoli salad also and accidentally put the cheese, flax seed, sliced cherry tomatoes, and red beans in my onion and cucumber salad. This recipe is quick. Like, stupid quick. The first time I made it, my wife, daughter and I were on our way to a neighbour's house for dinner. Not wanting to arrive empty-handed, I decided to whip up a quick salad. I was able to do so in the time it took for my daughter to find her coat and boots and put them on. She dawdles, so it was about 5 minutes. To help with the mood, I put on Vivaldi's Winter, a.k.a the Chef's Table theme (yes, it's on my playlist). Easy Cucumber Salad
This is a simple recipe from my childhood. My stepfather always made this growing up. We ate this as a side dish, as an appetizer, at cookouts,...even as a topper for other foods!
