Pickled Cucumber and grape salad

A refreshing addition to accompany a heavy meat fest! Made this for a Xmas potluck! Very easy and can be made ahead.

I use mirin to balance the flavours, you can also use coconut sugar instead. The chili flakes add a spicy extra kick to this salad.

I also use a ziplock bag to reduce washing fi dishes.

Ingredients

  1. 3slim Japanese cucumbers
  2. 1 boxgreen seedless grapes (500g)
  3. 2tsps pink salt (or any variety)
  4. 2 tbspsExtra virgin olive oil
  5. 2 tbspsmirin
  6. 1.5 tbspsbrown rice vinegar (or white vinegar)
  7. Chili flakes and black pepper

Cooking Instructions

    Chop cucumbers in chunks and place in a large ziplock bag. Add salt and mix well. Press something heavy on it and leave it overnight.

    Drain water out from the cucumbers. Add in grapes and all seasoning and mix well!
