Ingredients

  • 1 cupdrumstick flowers
  • 1/4th cup gramflour
  • 2 tbsprice flour
  • 1onion chopped finely
  • 2green chillies chopped finely
  • 1/2 tspbaking powder
  • 1/4th tsp kalonji (Nigella Seeds)
  • 1 pinchajwain (carom seeds)
  • 1 pinchturmeric powder
  • 1/4th tsp roasted cumin powder
  • 1/4th tsp red chilli powder
  • 1 pinchasafoetida
  • As neededsalt to taste
  • 1 tbsphot oil for mixing in batter
  • As neededoil for frying
  • 1 tbspcoriander chopped

Steps

    Pluck the drumstick flowers from the stems.Clean,wash and drain water completely. Set aside in a strainer smearing 1/4 th tsp salt.Combine drumstick flowers,chopped onion,green chillies,gram flour,rice flour,baking powder,turmeric,red chilli and cumin powder,asafoetida,kalonji and ajwain,salt to taste and chopped coriander in a bowl.Add 1 tbsp hot oil and mix well.Splash few spoons water as needed to make a thick batter.Set aside.

    Heat oil in a pan or wok.Take a teaspoon of batter and drop in hot oil.Fry the fritters in batches in medium heat,flipping when one side turns golden brown.Fry till fritters are crispy. Remove from oil with a slotted spoon and drain excess oil on a kitchen tissue.

    Serve hot as an appetizer or tea time snack or as a side with dal and rice.
