Tandoori broccoli an amazing recipe make it to have it as a starter or as a side dish or make zeera fried rice and have it as a main course along with some baked potatoes and salad and believe me it tastes divine. Easy recipe with all the available ingredients in your pantry. Marinate it in advance and bake it or shallow fry it or deep fry it or grill it at the time of serving totally upto you.

Firstly discard the stem of broccoli or use it in cooking potatoes or cauliflower. Cut the florets from the end and cut it longitudinally to make it look like a tree. Like so cut all the florets. Don't cut it too small else it will break while cooking and will look messy. Once done then blanch it for that in a wok add water and allow it to boil. Now add a tsp of salt to it and add all the cut florets to it. Submerge them and cover the wok. Let it cook for 5minutes on high heat then off the flame

Now drain off all the water and put the broccoli in chilled water by this the cooking process will stop and it will retain it's colour. After 10 minutes take it out of water and absorb all the water from the broccoli on an absorbent tissue paper or kitchen towel. Make sure there isn't any water in the broccoli. If there will be water the masala will not coat on the broccoli. Once done with the blanching process let's prepare the tandoori masala paste.

In a big bowl add all the above-mentioned spices along with roasted gram and mix well. Now add 1 tbsp oil and mix again. Now add 2 tbsp water to it and mix well. You can use ginger and garlic paste in place of powder and you can use lemon juice in place of amchur powder. If you are using these things then don't add water to the spice paste. You can adjust the spices more or less as per your taste. This spice quantity is perfect for 1 kg florets. Now add the blanche florets to the spice paste.

Coat the florets with spice paste all over with your hand making sure the masala coats the florets well. Don't skip the roasted gram flour as it's an important ingredient. It will help the spices to coat on the broccoli florets. Once all the florets are coated cover the bowl and marinate it for an hour in the refrigerator. You can even marinate it overnight also. After the marination is done take it out from the refrigerator and assemble it on the baking dish.

Cover the baking tray with aluminum foil and grease it with oil then put the marinated broccolis on it. Bake it in the preheated oven at 190°C for 25-30 minutes. After 15 minutes take it out flip the broccolis over and bake again for 10-15 minutes and the delicious tandoori broccoli is ready to be serve. I cut the potatoes like fresh fries and sprinkle salt and pepper on it with few drops of oil mix them and bake them too on 200°C for 30 minutes. I served it with some salad and zeera fried rice
