Turkish Borek rolls (granny's version)

Here's a recipe my grandmother learned from her Turkish friends in Germany.
It is all made from scratch and it's crunchy on outside, but full of flavour on the inside.

Here's a recipe my grandmother learned from her Turkish friends in Germany.
It is all made from scratch and it's crunchy on outside, but full of flavour on the inside.

First up, we start with the dough! In a small bowl of lukewarm water add 16gr of instant yeast, a half tsp of salt, and one tbs of flour.
Mix it al thoroughly with a fork, and let it set aside for 8 minutes. - 2
In a huge bowl add 1kg of flour, 1 tbs of salt mix it thoroughly and then add 80 ml of milk, 1 whole egg and 1 tsp of baking powder.

Start working on the dough with your hand, and after 2 minutes add the mixture of yeast.
Throughout the time Knead the dough for approximately 6-7 minutes. - 4
After kneeding the dough well enough, form it into a roll, cover it with a towl and let it rest for 1h and 30 minutes.

In the mean time in a pan, with 5ml of sunflower oil, add the ground beef, add 1 tbs of salt and vegeta(mixe spices) and 1 tsp of black pepper and let roast

Then go in with the spinach and once it's all roasted..set aside.

After the dough has risen up, Knead it for 3 minutes on a flour-ed surface and cut it into 7 pieces and make it into 7 rolls.

Open one of the rolls and layer it with a bit of sunflower oil.
And then add the spinach and ground beef mixture. - 9
Roll it up, and repeat the same process with the next 6 rolls. Lay them in a squared baking pan and cut them as shown in the photo.
Let them rest for another 45 minutes, so they can rise again. - 10
Aftery they have risen up for a second time, layer them with a little bit of sunflower oil and a 2 egg yolks with 2-3 tbs of milk mixture.
To top it off, sprinkle some sesame seeds, and put it in the oven for 35 minutes into 220°C..which in the mean time will be lowered to 200°C. - 11
After 30 minutes of bakingz layer it with just a little bit of water. And place it back in the oven for another 5 minutes.

Once it's all done, serve it with some yoghurt of any kind, and enjoy it! 💛
