Chocolate Pastry Cream Crêpe Cake

In a bowl, combine the flour with a pinch of salt and the sugar. Make a well in the center, add the eggs and a little milk. Mix well, then gradually add the rest of the milk, stirring to avoid lumps.
Let the batter rest in a cool place for about 30 minutes.
Heat a little butter in a crêpe pan over high heat and cook the crêpes. You should get about 20 crêpes. - 2
In a large bowl, whisk together the 4 egg yolks, 2 whole eggs, sugar, and flour. Pour in the hot milk and stir.
Return everything to the saucepan used to heat the milk. Cook over medium heat, stirring constantly, until the mixture thickens and does not stick to the bottom.
Remove from heat and add the chopped chocolate. Stir well until the chocolate is melted, then let the mixture cool. - 3
Use a serving dish to assemble the cake. (A springform pan works well.)
Alternate layers of crêpes and chocolate cream.
Spread a layer of chocolate cream between each crêpe as you stack them. Do not spread cream on the top crêpe.
Cover the crêpe cake with plastic wrap and refrigerate for about 8 hours. - 4
To serve, decorate with a little melted chocolate and either fresh fruit, shredded coconut, or any toppings you like.
