Schezwan Fried Rice

Wash and soak rice for 30 minutes and then drain it. Heat water about 6-8 cups in broad vessel and let it boil. Add salt and few drops of oil in water.

Once water start boiling,add drained rice. On a medium flame, let the rice cook uncovered. Do not over cook, drain it when it is about to cook or it becomes al dente. Turn of the heat and drain the rice in colander and gently rinse the rice in cold water so it stops cooking and doesn't stick.

Now heat the oil and sauté garlic for few seconds. Then add vegetables and turn the flame to high and keep stirring and tossing the vegetables till the colour of vegetables turns to brown colour and is cooked.

Add schezwan sauce, mix and cook for seconds. Add cooked rice in parts, toss and mix it vegetables.

Add salt,black pepper and vinegar and mix gently.

Serve hot.
