A Light and Refreshing Cheesecake with Pancake Mix

I love rich cheesecakes But, I wanted to eat something a bit refreshing in summer, so I tried adding yogurt to make a cheesecake that feels refreshing.
The baking time will vary according to each household oven, so bake while keeping an eye on it.

Place the cream cheese into a container, cover with plastic wrap, and heat up in the microwave for about 50 seconds (at 500W) to soften it.

Mix the cream cheese with an egg beater.

Add sugar to the bowl and mix until smooth.

Additionally, add in the yogurt and lemon juice, and mix together.

Add pancake mix, and stir with a rubber spatula until the flour disappears.

Pour the pudding into the paper molds (or aluminum cases), and fill 70% full with the batter.

Bake in an oven preheated to 180°C for 30~35 minutes until the surface has turned a light golden brown, and then it's done.

I lightly coated the recipe photo with marmalade for shine.

Make it cute by topping it with heavy cream and fruit.
