I had a family size bag of ravioli in the freezer that was forgotten for a minute. I forgot to thaw anything for dinner. Go me. Story of my freakin life. We needed a change from marinara. I whipped this together in the time it took the hubs to take the grandkids home, about 30 minutes. As my granddaughter says,”it was deeewishus”! Ingredients

30 minutes
4-6 servings
  1. Butter and olive oil
  2. Sliced scallions
  3. About 6 big cloves of garlic smashed and minced
  4. 1/2 cupwhite wine
  5. 1/2 quartheavy cream
  6. Garlic powder, onion powder, salt and white pepper
  7. 1/2 tbspItalian seasoning and 1 tsp of oregano
  8. 1/2 cupgrated parm, I actually grated my own😳
  9. Finely chopped fried bacon
  10. 1cup, give or take, of shredded cheese, I used Colby Jack
  11. 1family size bag frozen ravioli of choice

Cooking Instructions

30 minutes

    In a large skillet, add olive oil and butter, about a tbsp, and sauté the white part of the scallions and garlic on medium Add wine and allow it to reduce a little.

    Fill a large pot with water and boil the ravioli until desired tenderness. Drain. Be sure to salt the water well.

    Add cream to wine reduction. Add your seasonings and whisk. Heat to nearly boiling. Add the grated parm and whisk it in until melted. Start adding the shredded cheese a little at a time, stirring between additions.

    Add your boiled ravioli to the sauce, making sure they’re all submerged in the sauce. I added bacon bits and scallion tops over all of it. I served it with garlic bread and a nice green salad.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
