Drunken Alfredo Sauce

Decided one day after drinking some wine that I would use my Alfredo Sauce recipe to make my fiancé chicken alfredo lasagna. Turned out surprisingly delicious according to him. Tried to replicate the recipe sober since I didn’t record what I did, turned out exactly how he remembered it. This time I wrote it down.

Ingredients

  1. 1 tbspGhee
  2. 3 clovesgarlic, minced
  3. 3/4 cupheavy cream
  4. 3/4 cupwhole milk
  5. 1large egg yolk, beaten
  6. 1/4 cupwhite wine (I use Pinot Grigio)
  7. 1 cupfresh grated Parmesan cheese
  8. 1 cupfresh shredded Asiago cheese
  9. 1.5 tspItalian seasoning
  10. 1 pinchnutmeg
  11. 1 tbspchopped fresh parsley
  12. to tasteBlack pepper

    Combine ghee, garlic, heavy cream, wine, and milk in a saucepan over medium heat. Bring to a simmer; stir in Parmesan a little at a time when it is all incorporated the add egg yolk, whisking constantly to prevent the eggs from scrambling, afterwards add Asiago cheese a little bit at a time (be sure to whisk continuously to prevent sticking and burning). Finally add in the spices and give it a good stir to combine. If the mixture is too thick, add more milk/heavy cream as needed.

I throughly enjoy cooking. When I can actually remember to write down something after I do it after making a recipe on a whim I tend to post it here. This site is also a good way for me to record and remember my recipes. Gotta love modern technology.
