Ingredients

  1. 10 1/2 ozfresh green beans (about 300 grams)
  2. 10 1/2 ozpotatoes (about 300 grams)
  3. 2eggs
  4. 1pear (I used Abate)
  5. 2 tablespoonsextra virgin olive oil
  6. 1 tablespoonbalsamic vinegar (or apple cider vinegar)
  7. Salt to taste
  8. 1 handfulsunflower seeds

    Trim and wash the green beans, peel the potatoes, wash them, cut into chunks, and cook everything in a tiered steamer. This way, the flavors and nutritional values of the green beans and potatoes will be preserved.

    Cook the eggs until hard-boiled. Bring water to a boil, add the eggs, and cook for 7 to 8 minutes. Cool them in cold water.

    Peel and core the pear, cut it into pieces, and transfer to a tall glass. Add the oil, balsamic vinegar, and salt, then blend with an immersion blender until creamy.

    Assemble the dish with the green beans, potatoes, and hard-boiled eggs peeled and cut into wedges. Dress with the vinaigrette and sprinkle with sunflower seeds.
