Coconut Burfi

Serve this colourful extraordinarily eye catching Dessert to your loved ones and friends alike. Easy and absolutely mesmerizing. The Coconut used in it gives this Dessert a very good flavour and texture. Few ingredients and you are almost done. Fresh Coconut makes it all the more worthwhile. I have used dry food colour here for a bright and pristine looking Burfi. It's absolutely optional.
The best part is that it can be made on any day or any simple occasion too. It's healthy and nutritious as well. I had just used 2-3 tablespoons of Sugar in it thereby making it a healthy one. Jaggery also can be used for a more healthier version of it.
I usually make it as and when the demand pops up. My family just loves this Burfi. Since it's such a delightful one, I make it too often.
So all in all, a pleasant surprise for all those special people in your lives.
Happy Dessert Time Folks!

Steps
- 1
Dry roast the freshly grated coconut on a low heat until completely dry and done. You can use dry dessicated coconut powder too but the taste will differ a lot. Next is to add ghee and sugar.
- 2
Mix well. In no time, the mixture starts leaving the sides of the pan. Take it off the heat now. No need to add nuts because it is good on it's own. But I added almonds, muskmelon and pumpkin seeds as a lovely garnish.
- 3
Refrigerate it for an hour. Cut into squares or shapes of your choice. Enjoy!
- 4
Store in airtight containers in the refrigerator for best results if at all that remains. Yum!
