Stir-Fried Udon in 10 min with Simmered Nori Seaweed

A lady who was conducting a user taste-test at the supermarket for one particular product told me simmered seaweed is great with stir fried udon noodles, so I bought some of her paste and tried it out. It was really good, and has become a family favorite.

Microwave the vegetables and udon noodles to save time. This way you can complete the dish in 10 minutes! The flavor of nori seaweed paste varies, so please adjust the amount while tasting. This dish is delicious even without any meat or shrimp. You don't need any other seasonings! The sweet-salty flavor is really good. For 2 servings. Recipe by Kamekochan

Ingredients

2 servings
  1. 2packs Cooked udon noodles
  2. 2leaves Cabbage
  3. 2 cmCarrot
  4. 1/4Onion
  5. 50 gramsPork or shrimp
  6. 2to 3 tablespoons Nori seaweed paste (nori no tsukudani)
  7. 1 dashVegetable oil

Cooking Instructions

    Chop up the cabbage. Cut the carrot in half lengthwise and slice thinly. Slice the onion thinly. Put all the vegetables in a heatproof container, cover with plastic wrap or a lid and microwave for 1 minute.

    In the meantime, heat up a frying pan. Take out the microwaved vegetables, put in the udon noodles and microwave for 1 minute. Stir fry the vegetables and meat or shrimp.

    When the vegetables and meat etc. are cooked, add the udon noodles to the frying pan with 60 ml of water.

    When the water has reduced and the udon noodles are warmed through, add the nori seaweed paste. Taste after adding 2 tablespoons, and add a bit more if you think it's needed.

    When the nori seaweed paste is evenly distributed, it's done.
