Quick and Easy Stir-Fried Udon with Shirodashi

Just add some vegetables, and you have a quick and easy lunch that's perfect! With just shirodashi and soy sauce, the flavor comes together quickly.
The story behind this recipe: After making a hot pot, we often have leftover udon... I often make this for lunch with my daughter.
Cooking Instructions

Cut the vegetables into bite-sized pieces, and do the same with the pork.

Since the pork will release oil, use a small amount of oil to stir-fry the meat first. Once it changes color, add the vegetables and stir-fry.

Once the vegetables are tender, add the udon noodles, water, shirodashi, and soy sauce. Stir-fry over medium heat until the liquid evaporates.

If you prefer a lighter soy sauce flavor, use 1 1/2 tablespoons; for a stronger flavor, use 2 tablespoons.

It's recommended to use plenty of bonito flakes.

You can use any vegetables you have on hand, and you can use beef or no meat at all!
