Do you worry about messing up your lipstick or getting your hands dirty eating a Sicilian cannoli, but it's so delicious you don't want to miss out? Then this recipe is for you.

Make sure the ricotta is very fresh. Let it drain overnight in the refrigerator so it becomes dry. Then sift it.

Add the sugar to the ricotta and beat with an electric mixer for at least 5 minutes, until the sugar is fully dissolved.

Add the chocolate chips and gently fold them in with a wooden spoon.

Transfer the ricotta cream to a piping bag with a wide tip. To make it easier, place the piping bag in a tall glass while filling.

Roughly crush the cannoli shells, leaving some larger pieces. Place some crushed shells at the bottom of serving cups, add a layer of ricotta cream, a layer of chopped pistachios, and finish with a few more pieces of cannoli shell. If you have extra ricotta cream, pipe a decorative swirl on top.
