  1. 1Red Onion, diced small
  2. 3Bell Peppers, diced small
  3. 2Cucumbers, diced small
  4. 5Tomatoes, diced large
  5. 1 bunchParsley, chopped
  6. 1 bunchMint, chopped
  7. 2Lemons, juiced
  8. 1/2 cupExtra Virgin Olive Oil
  9. 1 packageSunflower Seeds, shelled and unsalted

  1. 1

    Mix all veggies, lemon juice, and olive oil in large salad bowl with lid. Can store for several days in fridge.

  2. 2

    Add Sunflower Seeds to served portions. They get too soggy in the bowl.

  3. 3

    Enjoy.
