First, toast the vermicelli until golden brown.

Boil water in a pot. Add the toasted vermicelli, a little salt, and 1 teaspoon oil to the boiling water. Cook until done.

Check if the vermicelli is cooked, then drain it using a strainer. Rinse with cold water to keep the strands separate.

Finely chop all the vegetables.

Heat oil in a skillet. Add mustard seeds and curry leaves, and let them splutter. Add green chilies, then add the chopped onion and sauté until it turns pink.

Add the tomato, bell pepper, and carrot. Mix well and sauté until the vegetables are soft.

Add the cooked vermicelli, then add red chili powder, turmeric, and seasoning mix. Mix well and sauté for 1-2 minutes.
