Ingredients

40 min
  1. 1 lb (2 oz)apricots (about 500 g)
  2. 1/2 cupsugar (about 100 g)
  3. 1 cupall-purpose flour (about 125 g)
  4. 3eggs
  5. 1 1/4 cupsmilk (about 300 ml) or 3/4 cup milk and 3/4 cup heavy cream (about 150 ml each)

  1. 1

    Mix the flour with the sugar and eggs.

  2. 2

    Gradually add the milk.

  3. 3

    Cut the apricots into quarters.

  4. 4

    Butter a baking dish.

  5. 5

    Arrange the apricots in the dish and pour the batter over them.

  6. 6

    Bake at 350°F (180°C) for 40 minutes.

  7. 7

    Let cool slightly, then remove from the dish.
