Heat the thick part of the coconut milk in a pot until the oil separates, then add the green curry paste and stir until dissolved.

Add the meat and stir-fry until partially cooked. Pour in the remaining coconut milk. Once it comes to a boil, add the Thai eggplants and bamboo shoots.

Season with fish sauce and sugar to taste. When everything is cooked and the eggplants are tender, add the sweet basil leaves and top with the sliced bell pepper.
