Egg Frankie or Egg Kathi Roll is a popular Indian street food from Kolkata. A layered flatbread or roti is coated on one side with egg and stuffed with a filling of shredded veggies like cabbage, carrot, onion, capsicum and seasoned with spices and ketchup. These are then rolled, making them a healthy and tasty snack or appetizer. Other stuffings like cubed masala paneer ,boneless chilli chicken or mutton kababs may also be added and we can customize it according to our taste. A perfect combination of vegetables, protein and carbs, these versatile rolls make for a delicious and filling breakfast, snack and a light meal.

Add plain flour or maida, wheat flour, salt and oil in a bowl.Mix well.Add warm water as needed to knead a soft dough.Cover and keep aside for 30 minutes..After 30 minutes divide the dough into equal balls. Meanwhile heat oil in a pan, add sliced onions and saute for 2 minutes.Now add sliced capsicum, cucumber, shredded cabbage and saute 2-3 minutes till vegetables are slightly softened but not losing their crunch. Sprinkle 1/4 tsp salt and black pepper powder.

The filling for Egg Frankie or Kolkata Style Egg Roll is ready.Take one dough ball and roll it.Give it the shape of a coil.Smear little oil and roll into a round paratha. Place the paratha on a hot lava or pan.When one side is partially cooked, flip it and drizzle 1 tsp oil.Cook the paratha till brown spots appear on both sides Set aside.

Break 1 Egg in a bowl. Add black pepper powder and salt and whisk it with a fork.Grease pan with oil.Pour the egg mixture on hot tawa and when it starts to brown on one side, place the cooked paratha over it and cook for 2 minutes. Transfer to a plate and repeat same process with the other parathas To assemble, spoon 2 tablespoons of cooked veggies onto the centre of the paratha.

Sprinkle some sliced onions, green chillies and chaat masala. Spread some lemon juice, chilli sauce and tomato sauce over the vegetables. Now roll into butter paper tightly and serve hot.
Tips
Make the paratha or wrap and filling separately.Make the Frankie when ready to serve.Thin roti or frozen parathas can also be used to make these Egg Frankies or Kolkata Style Egg Kathi Roll.Serve hot.
