Wash and peel off snake gourd. Cut vertical in halves, remove all seeds and strings.
Then, cut in half rounds. Wash and soak moong dal in water for at least 30 minutes. - 2
Take a kadai. Add oil, rai, and hing. Add tomatoes, saute it. Add moong dal and snake gourd. Cover a lid, cook it till turns soft. Check if required, then add water as snake gourd releases its natural water.

Add salt, turmeric powder, kokum, nolen gur, and mix well. Cook for a couple of minutes.

Add red chilli powder, jeera coriander powder, and garam masala.

Ready to serve. Garnish with chopped coriander. Enjoy roti, puri, paratha, and steamed rice with this sabji.
