You can swap the bacon for diced cured ham, canned tuna, or some fried anchovies—just a few ideas. Feel free to use any ingredients you like.

Peel the potatoes and place them in a pot with water and salt. While they cook, trim the green beans and cut them lengthwise and crosswise into thirds.

After the potatoes have boiled for 8 minutes, add the green beans. I use a steamer basket in the middle.

Remove the potatoes and place them on a plate. Add a small splash of milk and mash them.

Sauté the sliced garlic and chopped bacon. Add a little of this mixture and the cooking oil to each plate. (There will be very little oil.)

Cook the quail eggs and roughly chop the nuts in a food processor with a couple of pulses.

Assemble the dish and serve for lunch or dinner. Top with a few whole nuts. Delicious!
