  • Ingredients for the croquettes
  • 1 lb. (454 grams)cooked crab meat
  • 2 tablespoonsmayonnaise
  • 1 tablespoonwhole grain mustard
  • 1beaten egg
  • 1/2 teaspoonsalt
  • 1/4 teaspooncayenne pepper
  • 1/4 teaspoonblack pepper
  • 1/4 cupfinely diced red onion (brunoise)
  • 1/4 cupfinely diced red bell pepper
  • 1/4 cupfinely diced green bell pepper
  • 3green onions, chopped
  • 1 1/2 tablespoonschopped cilantro
  • 1/4 cupbreadcrumbs
  • Breadcrumbs for coating the crab cakes
  • Oil for frying
  • Ingredients for simple coleslaw
  • 1.1lbs. (500 grams) green cabbage, finely shredded or grated
  • 1grated carrot
  • 1/2 cupmayonnaise
  • 1 tablespoonwhole grain mustard
  • 1/4 teaspoonsalt
  • 1/4 teaspoonground black pepper
  • 1 tablespoonapple cider vinegar
  • Sauce for the croquettes
  • 1/2 cupmayonnaise
  • 1 tablespoonwhole grain mustard
  • 4green olives with pimento, chopped
  • 1small pickle, finely diced
  • 1 tablespooncapers, chopped
  • 1/4 teaspoonground black pepper
  • 4sandwich rolls

Steps

40 minutes.
  1. 1

    PREPARING THE CROQUETTES
    Clean the crab meat, making sure there are no bits of shell.
    In a bowl, mix the mayonnaise, mustard, beaten egg, salt, cayenne pepper, black pepper, red onion, red bell pepper, green bell pepper, and 1/4 cup breadcrumbs. Add the crab meat and mix well. Refrigerate for 1 hour so the breadcrumbs absorb the moisture and the mixture firms up.

    Shape the mixture into flat croquettes, like burgers, and coat them well with breadcrumbs. Make them to fit the size of your sandwich rolls.
    Heat oil in a skillet and fry the croquettes. Place them on paper towels to absorb excess oil.

    COLESLAW
    In a bowl, mix the mayonnaise, mustard, salt, pepper, and vinegar.
    Toss the dressing with the cabbage and carrot.

    Sauce for the croquettes
    In a bowl, mix all the ingredients together. Use this sauce on the sandwich rolls.

    ASSEMBLE THE SANDWICHES
    Slice the rolls in half, warm them, and spread a layer of sauce on both sides. Add the coleslaw and a crab croquette. Top with the other half of the roll. Secure with sandwich picks and cut in half. Serve with salad, chips, or French fries.
