First we will make the masala milk powder for that in a pan add almonds, cashews, pistachios, green cardamom and black pepper corns and dry roast them on low flame for 4 or 5 minutes stirring continuously. Don't burn them. Simply roast them to take out the moisture from them and them crispy. Once done off the flame and allow it to come on room temperature. Then grind it to a coarse powder in a pulse mode of mixer grinder. If you will grind continuously the oil will start to release.

It will become paste in place of powder. So always grind the dryfruits on pulse mode. Once done take it out in a bowl then add the turmeric powder and dry ginger powder to it and mix well. Then grate the nutmeg and add to it followed by saffron strands and mix really well. Our homemade masala milk powder is ready. Store it in a dry airtight container and put it in a refrigerator. It will be good enough for more than 2 months. If you want to make this powder for summer than add dried rose petals

And only a tsp of black pepper corns in place of 1 tpsp. You can even dry roast the fresh rose petals and use it in the powder. Rest every ingredient will be the same.
Now for making the masala milk in a wok add 3 glass of milk and allow it to boil on a high flame then put the flame to medium and boil it stirring occasionally so that it won't stick to the pan. We have to reduce the milk 30 percent. Scrape the cream from the edges and mix it to the milk. It will take almost 15 minutes to reduce. - 4
Once reduced to the desired consistency add the prepared masala milk powder 1 helpful spoon for 1 glass or you can add more or less as per your choice. Then add the sugar and it's totally optional. You can use honey or brown sugar also in place of sugar but add them at the end else milk will curdle. Now allow to boil then lower the flame and cook for 2 minutes and off the flame. Our masala milk is ready. Serve it either hot or on room temprature. You can even serve it cold or chilled.
