Mushrooms are a good source of Selenium, Vitamins D and B6 all of which helps to keep a healthy immune system. The benefits are innumerable. These are perfect on any day in any form. Either a simple stir fry or a roast, a warm and a delectable Soup or a Curry, a barbeque or a gravy based dish, they are just too perfect.
Infact many of us love them for their velvety smooth and creamy texture. These gel with any and every other Vegetable.
And the most important part being that it gets done quickly too without much hassles. I just love everything about them. These are always on my menu and I make many dishes with these very often. Children also love it. That's the most satisfying part for me. This Soup here is creamy, savoury and meaty. The flavours will make you fall head over heels in love with it just as me.

Bring some water to boil at first and soak these button mushrooms in it for about 5-6 minutes. Now make sure to clean them thoroughly to get rid of all the unwanted particles like that of sand and grime.

Meanwhile heat olive oil in a pan. Add chopped garlic and onion. Saute until the raw smell fades away and it's translucent preferably on a low heat. Next add the mushroom halves and cook for 4-5 minutes or until sauteed well.

After everything is done and at room temperature, blend them to a smooth puree with some water if needed. Add this back to the pan. Make a cornflour slurry as well and add it. Bring it to a rolling boil for a few minutes just until it slightly thickens. That's it. Stir in the salt and both the peppers. Also add a tablespoon of fresh cream. Mix well and that's it.

Lo and behold! The creamy mushroom soup is all ready to be enjoyed piping hot with a garnish of fresh coriander or parsley and a generous swirl of cream on top. Yum! Enjoy! Bon Appetit!

P.S - Some mushrooms can be reserved and later on added to the soup so that there is a crunch of freshly sauteed mushrooms in every sip.
