Ingredients

About 35 minutes
Serves 6 servings
  • 5 cupswhole milk (about 1.2 liters)
  • 1 cupshort-grain rice (about 200 grams)
  • 1 cupsugar (about 200 grams)
  • 1 teaspoonsalt
  • 2 1/2 cupswater (about 600 milliliters)
  • Orange blossom water or ground mastic (optional)

Steps

About 35 minutes

    Bring the water to a boil with the rice and salt.

  2. 2

    Once all the water is absorbed, slowly add 4 cups of the milk and stir over medium heat.

  3. 3

    Dissolve the sugar in the remaining milk you set aside.

  4. 4

    When the mixture starts to thicken, add the milk with dissolved sugar and, if using, the orange blossom water. Stir for about 5 minutes.

  5. 5

    Remove from heat and serve. Sprinkle a little cinnamon on top. It’s delicious warm, but just as good cold. Enjoy!
