My Mom's Traditional Rice Pudding (Rizogalo)

I remember when I was little, my mom would make rice pudding and the whole house would smell amazing. She used sheep’s milk, but I make it with whole cow’s milk. Every time I make it, it brings back memories of my childhood!

I remember when I was little, my mom would make rice pudding and the whole house would smell amazing. She used sheep’s milk, but I make it with whole cow’s milk. Every time I make it, it brings back memories of my childhood!
Steps
- 1
Bring the water to a boil with the rice and salt.
- 2
Once all the water is absorbed, slowly add 4 cups of the milk and stir over medium heat.
- 3
Dissolve the sugar in the remaining milk you set aside.
- 4
When the mixture starts to thicken, add the milk with dissolved sugar and, if using, the orange blossom water. Stir for about 5 minutes.
- 5
Remove from heat and serve. Sprinkle a little cinnamon on top. It’s delicious warm, but just as good cold. Enjoy!
