Ingredients

  • 1large bittergourd
  • 2 clovesgarlic - finely minced
  • 2small chilies - finely minced
  • 2 sprigscurry leaves
  • 2 TABLEspoonsbutter
  • 1 TABLEspoonoil
  • 2-3 TABLEspoonsalted egg powder
  • 1 TABLEspoonsugar or to taste
  • 1 TEAspoonchicken bouillon or seasoning powder/or to taste - or use a pinch of salt as needed
  • 📝 NOTES
  • 1. We usually use cooked & mashed salted egg yolks (2-3 yolks or more). Using powdered form here as an easy alternative to actual yolks
  • 2. Butter is optional. Use 3 to 4 TBSP of oil (or as needed) if not using butter
  • 3. Blanching is to reduce the taste of bitter gourd. Blanch it in salted hot boiling water for 2-3 mins. Then drain & discard the water
  • 4. Another way to reduce bitterness is to rub bitter gourd slices with salt & leave aside for 5-8min then wash or soak for few mins
  • 5. Skip blanching or salting if you like it bitter

Steps

  1. 1

    Halve the bitter gourd length-wise. Using a spoon, remove the soft, spongy whitish pith filled with seeds completely. Next, slice it into preferred thickness. Boil 2 -3 cups of water in a pot. Add 1 tsp of salt. Bring to a rolling boil. Add bitter gourd and blanch for 2-3 minutes. Remove from the pot & drain the water. Blanching helps to reduce the bitter taste.

    Next, gather and prep the rest of the ingredients. See pic below for reference.

    Heat butter and a tbsp of oil in a wok. Then add garlic, chili and curry leaves. Sauté for a minute over medium heat. Add mashed salted egg yolks or salted egg yolk powder.

    Stir for another minute until fragrant and the yolks turn foamy. Add bitter gourd and continue to cook & stir for another minute or two.

    Add seasonings: sugar and a teaspoon of chicken seasoning powder or chicken bouillon. Stir to mix. Taste and adjust seasonings accordingly. Remove from the heat and serve warm with hot rice.
