Perfect Pumpkin Salad

Use very little mayonnaise. If you're making a pumpkin salad, this is the one! The key is the pre-seasoned cucumber. Make it with delicious pumpkin. This recipe serves two generously.

Remove the seeds and pulp from the pumpkin, and cut it into bite-sized pieces with the skin on. Arrange on a plate and microwave until soft. (You can also boil it if you prefer.)

(Meanwhile) Slice the cucumber thinly, rub with salt, and let it sit for a while. Once it releases water, rinse quickly and squeeze out the excess water. Mix in the vinegar and sugar.

While the pumpkin is still hot, season with salt and pepper and mix roughly. Be careful not to mash it too much! Use a spoon to cut through the skin. Add the cucumber mixture.

Once the pumpkin has cooled slightly, add the mayonnaise and mix gently. Less mayo tastes better....And it's done!

Roughly mix to a nice texture.
