This is a tonkatsu recipe that doesn't use oil.

Heat a skillet over medium heat and melt the butter. Once melted, add the panko breadcrumbs.

Toast the panko, stirring, until golden brown, then transfer to a plate. Watch carefully—once it starts to brown, it happens quickly!

Trim any tough connective tissue from the pork loin. Season both sides with salt and pepper. Dredge each piece first in flour, then dip in the beaten egg.

Coat the pork evenly with the toasted panko from step 2, then place on a sheet of paper towel. Preheat the oven to 428°F (220°C).

Bake at 428°F (220°C) for 8–10 minutes.

While the pork bakes, prepare some cabbage to serve on the side if you like.
