Melt-in-Your-Mouth Vegetable Pot-au-Feu

Just simmer whatever vegetables you have in your fridge with bacon—tender veggies that warm your body and soul! If you have leftovers the next day, add some water and curry roux for a delicious twist.

Ingredients

Serves 4–5 servings
  • 3.5 ozbacon (about 100 grams)
  • 3medium potatoes
  • 1onion
  • 1carrot
  • 4-inch piece daikon radish (about 10 cm)
  • 3–4 leaves cabbage (or napa cabbage)
  • 2 tablespoonsolive oil (or vegetable oil) (about 30 ml)
  • 3 tablespoonsbouillon granules (about 45 ml)
  • 6sausages
  • Salt and pepper, to taste (optional)
  • Parsley, to taste (optional)

Steps

    Add olive oil to a pot and lightly sauté the bacon. Add all the vegetables, cut to your preferred size (cut larger for adults, smaller for kids).

    Once the oil coats everything, add enough water to cover the ingredients and the bouillon granules. Simmer until the vegetables are tender. (A generous amount of broth is recommended.)

    Season with salt and pepper to taste. Add the sausages, bring back to a boil, and it’s ready! Serve in bowls and garnish with parsley if you like.
