Easy! Edamame Rice with Frozen Edamame

This is a super simple edamame rice made in a rice cooker using frozen edamame. It tastes great even when cold, so it's perfect for lunchboxes or rice balls. (The brown spots in the photo are crispy rice!)

A friend from Yamagata used to send me "dadacha-mame" (a type of edamame), and the rice balls made with them were delicious. I wanted to find an even easier way, so I created this shortcut recipe using frozen edamame.
Easy! Edamame Rice with Frozen Edamame
This is a super simple edamame rice made in a rice cooker using frozen edamame. It tastes great even when cold, so it's perfect for lunchboxes or rice balls. (The brown spots in the photo are crispy rice!)

Steps

Rinse the rice and drain it in a strainer.

Thaw the frozen edamame under running water until just soft enough to remove from the pods, then shell the beans.

Place the rinsed rice in the rice cooker bowl. Add water (up to the line for 2 cups), granulated dashi, sake, and soy sauce. Mix well.

Add the shelled edamame to the rice mixture and start the rice cooker.

This is how it looks when cooked.

Mix the edamame and rice together well. Enjoy the crispy rice bits too!

Shape into rice balls if you like.
