Peel the potato and cut it into thin strips (using a slicer makes it easier). Put it in a bowl, sprinkle generously with salt and pepper, mix, and let it sit for about 5 minutes. (The starch from the potato will act as a binder.) If you're short on time, you can skip the waiting.

Add plenty of Parmesan cheese, sprinkle with parsley, oregano, basil, etc., and mix together. Then, it's ready to cook!

Add olive oil to a frying pan and heat it up. Add the potato mixture, flatten it into a round shape, and cook. (Use medium to high heat.) Once it browns, flip it over and cook until both sides are golden brown. It's ready to serve!
