The origin of this recipe: When making karaage, I accidentally put too many pieces in at once, and they stuck together like a hamburger. So, I thought, why not intentionally make it hamburger-style?

Cut the chicken breast into 1 to 2 cm cubes and place them in a plastic bag. Make them smaller than typical karaage pieces. To make it easier to add ingredients, place the bag in a bowl.

Add sugar, soy sauce, sake, vinegar, and egg to the bag. Seal the bag and massage the ingredients into the chicken thoroughly.

Add all-purpose flour and cornstarch to the bag and massage again.

Pour a generous amount of oil into a frying pan. Shape the chicken mixture into a hamburger shape and place it in the pan. Fry until golden brown.

Once one side is cooked, flip it over and cook the other side.

When both sides are cooked, drain the oil and it's ready to serve!

I also tried mixing in rehydrated hijiki and sesame seeds for a Japanese-style twist.
