Surprisingly Light Tempura Shio Ramen

Thank you for making this a popular recipe on 12/18/2011! This is my go-to method for shio (salt) ramen. In the photo, I used 1/4 portion each of burdock and carrot tempura and mixed vegetable tempura.
How this recipe came to be: I heard that making ramen this way was delicious, and even though I was skeptical, I tried it... and wow, it was so good! Using half the usual amount of tempura keeps it from being too heavy, and adding plenty of green onions makes it even better. Over time, this has become a staple in my kitchen.
