Ingredients

Makes 1 loaf
  • 1 1/8 cupsall-purpose flour (about 140g)
  • 1 teaspoonbaking soda
  • 1 pinchsalt
  • 2ripe bananas (about 200g)
  • 1/3 cupbrown sugar (about 80g)
  • 1/3 cupunsalted butter (about 80g)
  • 1teaspoon/ a dash of vanilla extract
  • 1egg
  • 1/4 cupto 1/2 cup nuts of your choice (pecans, walnuts)

Steps

    Sift the dry ingredients together. Chop the nuts finely with a knife. Let the butter come to room temperature.

    Preheat the oven to 350°F (180°C). Mash one banana with a fork.

    Blend the other banana into a creamy texture using a hand mixer. Gradually add the wet ingredients and mix for about 3 minutes.

    Add the sifted dry ingredients and mix. Add the mashed banana and nuts, and gently combine.

    Pour the mixture into a greased and lightly floured loaf pan. Bake for 30-40 minutes. It's done when a skewer inserted comes out clean.

    If the top browns too quickly, cover with aluminum foil.
